French Macarons

Now these were SUPER fun to make! I was asked to make these macarons for a bridal shower with a purple and green color scheme. These were made French style which employs grounded almond meal in the meringue mix. The filling can be a wide array of different flavors and textures. I decided to make some filled with dark chocolate ganache and some with an Italian meringue buttercream to keep things light and airy.

Lemon Bar Meringue Cupcakes

For these, I decided to take it a step further and bake some lemon bars from scratch and add them to my existing lemon meringue cupcakes. I must say they came out so delish! Super lemon zesty treats balanced out with enough sweetness. The crust is filled with such buttery goodness that it takes on a soft shortbread consistency! And the layer of baked lemon curd came out so creamy yet tangy! While making these, I had a great idea for an alternate lemon bar cupcakes version that can fuse the two tasty treats together. I'll be attempting that feat in the coming weeks. For now, enjoy taking a gander at this version. :) The lemon bar recipe was inspired by Dandelion Mama.

Strawberry Chocolate Roses

      A dark chocolate cupcake filled with strawberry jam preserve topped with sweet strawberry buttercream frosting (blended with fresh strawberries), and garnished with a sinful chocolate rose. I also sliced some strawberry to mimic leaves out of the rose. Love that burst of fresh strawberry flavor you get from the frosting!!! :D
